I’d like to introduce myself and Phat Backs not just to you, but to the community.  Why would you care?  Maybe you don’t (close your browser and get a sandwich!).  Of course I wouldn’t be able to do this without help from my late Father and our sons namesake Ken Dibble, and my darling Stephanie (queen of the beans!). Stephanie and I moved to Richfield Springs in 2016, and added to our family a beautiful baby boy named Kenneth or “Kenny” born in December of 2017.  Stephanie is a transplant from the Liverpool area where she attended Syracuse University and is now an elementary school teacher in Cooperstown.  She contributes a ton to the Phat Backs food truck, teaches all week and holds our home together while I am off making food.  We both feel it is important that you know who we are as you and/or your children may pass by or stop in for some delicious food!

As for me (Scott) I graduated from Milford Central High and eventually graduated from SUNY Cobleskill. I also own Upstate Technology LLC, a full service technology firm operated out of our home.  I spent years working within many of the technology laden companies in the area before I ventured out and started my own company in 2011, to try and bring some affordable computer support to the Otsego County area. Prior to that  I spent a number of years working in the Oneonta area restaurants including 7 years as Executive Chef for The Homestead Restaurant formerly located in Colliersville New York (I won’t age myself by divulging how long ago that was).

After enjoying many years of success in the technology world, I have decided to go back to doing what I LOVE, and that is cooking.  Just as I strive to do with the tech business, I thoroughly enjoy bringing as much quality and value as possible, if for no other reason but to raise our expectations of food establishments, to bring homemade delicious food to your family without breaking the bank!!  Trust me when I say, we’re not making much money doing this, it is not my primary source of income, this is what I love to do, not what I NEED to do… which ends with this…

…I also started this Food Truck for my son Kenny.  I believe kids need to value hard work, and the day will come where he will earn his money working in Dad’s Food Truck, and if he so desires, he can take the business over when he’s ready.
